Ultimate Chicken Burger

Ingredients
½ bag of Proper Crisps (Chilli flavour), crushed
1 x chicken breast, butterflied
1 x egg
4 x slices Colby cheese (2 per burger)
2 x sesame seed brioche buns
2 x tablespoons hummus (your choice of flavour)
2 x handful of rocket (1 per burger)
4–6 slices cucumber
4–6 pickle slices
1 x avocado, smashed with a squeeze of lemon juice
Salt and pepper to taste
To serve:
Additional crisps
Extra rocket salad
Hummus
Pickles on side
Preparation
Prepare the Chicken:
• Preheat your air fryer to 180°C.
• In a small bowl, whisk together the egg.
• Coat the butterflied chicken breast in the egg mixture, then press it firmly into the crushed Proper Crisps until evenly coated.
Cook the Chicken:
• Place the coated chicken breast in the air fryer basket. Cook for 20 minutes, flipping halfway through.
• After 16 minutes, lay the Colby cheese (or cheese of your choice) slices on top of the chicken and let them melt during the final few minutes of cooking.
• **If you do not have an air-fryer, simply shallow fry and add to the grill to melt the cheese once cooked, or oven bake**
Assemble the Burger:
• Spread hummus on the bottom half of each brioche bun.
• Add a layer of rocket, followed by the crispy chicken breast with melted cheese.
• Top with cucumber slices, pickles, and a generous layer of smashed avocado.
• Place the top half of the brioche bun on the burger and serve immediately.
