Sweet Nachos are the treat you didn’t know you needed

Dessert Nachos by Chef Carlos Rodriguez
Ingredients
- Vanilla ice cream
- Proper Crisps Sweet Cinnamon Tortilla Chips
- Edible flowers and fresh mint to garnish (optional)
Spiced Syrup
- 100 ml water
- 50 g sugar
- 1 star anise
- 1 cinnamon stick
Mixed-Berry Compote
- 200 g mixed berries (fresh or frozen)
- 50 g sugar
- 50 ml water (optional to reach ideal consistency)
Steps
In a small saucepan, combine water, sugar, star anise, and cinnamon stick.
Heat gently until sugar dissolves; let infuse for a few minutes. Discard spice solids and reserve syrup.
In a saucepan, combine frozen berries, sugar, and water. Simmer over medium-low heat, stirring occasionally, until berries soften and sauce slightly thickens—about 8–15 minutes
Remove from heat and cool slightly. Taste and adjust sweetness or acidity by adding a splash of lemon juice.
Open a bag of Cinnamon tortilla chips by Proper Crisps and put it in a big bowl.
Spoon over mixed-berry compote and drizzle over some reserved syrup. Add 3 scoops of vanilla ice cream.
Garnish with fresh mint leaves and edible flowers. Serve immediately and enjoy!
