The most beautiful platter when paired with our colourful Garden Medley crisps.

1 tbsp butter
2 C corn kernels fresh or frozen
2 tbsp mayonnaise
2 tbsp sour cream
100 g feta crumbled
1 tbsp preserved sliced jalapeno
1 lime juiced
1 tsp ground cumin
1 tsp smoked paprika
½ tsp chilli flakes
¼ handful fresh coriander chopped
150 g Proper Salted tortilla chips for serving
Heat the butter in a frying pan over medium heat. Add the corn and cook for 4–5 minutes until golden and slightly charred. Transfer the corn to a bowl and let cool slightly.
Stir in the mayonnaise, sour cream, crumbled feta, jalapeño (if using), lime juice and spices.
Mix until well combined.
Stir through the chopped coriander. Transfer to a serving bowl and garnish with extra feta. Serve with Proper Tortilla Chips alongside.
