· Vegan Queso Sauce
· 1 1/4 cup hot water
· 1 cup raw cashews
· 1 tsp minced garlic
· 2 tbsp nutritional yeast
· 1 tbsp harissa
· 1 tsp cumin
· 1 tsp salt
Nachos
· 1 tin black beans
· 1 packet Proper Crisps Tortillas
· 1 cup chunky salsa
· Fresh chilli, sliced (optional)
· Coriander or parsley, chopped
Simple Guacamole
· 1 large avocado
· 1 lime, juiced
· Salt and pepper, to taste
Start by making the Queso Sauce. Combine all ingredients in a high-speed blender, blend until creamy. If it looks too thin, add more cashews.
Place black beans in a small saucepan and gently pan fry. Add your choice of spices – we recommend chilli powder and/or cumin.
Set aside and prepare guacamole. Mash ingredients together, adding salt and pepper to taste.
Arrange chips on a large serving platter, and add beans, queso, salsa, chilli (if using), guacamole and herbs.
