Ingredients
Vegan Queso Sauce
1 1/4 cup hot water
1 cup raw cashews
1 tsp minced garlic
2 tbsp nutritional yeast
1 tbsp harissa
1 tsp cumin
1 tsp salt
Nachos
1 tin black beans
1 packet Proper Crisps Tortillas
1 cup chunky salsa
Fresh chilli, sliced (optional)
Coriander or parsley, chopped
Simple Guacamole
1 large avocado
1 lime, juiced
Salt and pepper, to taste
Preparation
Start by making the Queso Sauce. Combine all ingredients in a high-speed blender, blend until creamy. If it looks too thin, add more cashews.
Place black beans in a small saucepan and gently pan fry. Add your choice of spices - we recommend chilli powder and/or cumin.
Set aside and prepare guacamole. Mash ingredients together, adding salt and pepper to taste.
Arrange chips on a large serving platter, and add beans, queso, salsa, chilli (if using), guacamole and herbs.
